This week for the first time I tried a new recipe from one of those home delivery meal plans. Blue Apron provides meals according to your preferences, and I was fairly surprised by what we received. The first recipe we tried was the Pork Lettuce Cups.
- 10 oz Ground Pork
- 1/2 lb Cauliflower Rice
- 1 head Butter Lettuce
- 1 Tbsp Rice Vinegar
- 2 Tbsp Coconut Aminos
- 1/2 l Cocktail Tomatoes
- 4 oz Sweet Peppers
- 1 Tbsp Sesame Oil
- 1 oz Jalapeno Peppers
It was easy to make, and all the ingredients were provided in correct portions. Not to mention, they were extremely delicious! My wife tends to have a more selective palate than I do, and she thought they were incredible.
Each recipe came with a full-color double-sided page outlining the ingredients and steps on how to make it. If you’re into wine, it also tells you about pairing it with this meal. From the meat and veggies to the seasonings and dressings everything is accounted for and ready for cooking.
The first step is to cut the tops off the sweet peppers. I cleaned out the seeds. By the way, have you ever had a hard time getting those little things to cooperate? For me they always fly everywhere! Cut them in half lengthwise, and then in little half moons like you see in the picture.
Next you’ll want to cut the root ball off the lettuce and wash it thoroughly. I placed mine on a paper towel after to make sure that the excess water I couldn’t shake out didn’t get all over the place. I would recommend a plate or something that can collect the water better. I ended up with a puddle on the kitchen counter when I was done.
Now I usually don’t like tomatoes, but I figured I would give these little guys a try. You mix in half the vinegar, and then lightly salt and pepper them. Add the diced jalapenos and lightly drizzle olive oil on top. Mix gently and let sit while you move onto the next steps.
The ground pork was easy as well. Simply add it to a medium pan with a little bit of olive oil. Make sure it is thoroughly cooked. Then add the sweet peppers, the remaining vinegar, sesame seed oil, and liquid amino. I must admit, this is when the kitchen started smelling REALLY good.
Nearing the end now, we just add the cauliflower rice to a pot with a little bit of olive oil. Stir the cauliflower frequently over the next 3-4 minutes until gently cooked. Careful not to overcook this as it might get mushy and lose it’s texture.
Voila! Once you have completed the preparation and cooking it is finally time to eat! Place a lettuce leaf on a plate. Add the desired amount of cauliflower rice, ground pork and sweet peppers, and tomatoes with jalapenos.
It was actually a little messy to eat, so next time I might consider slightly draining the meat to remove excess oils and liquids. I would still keep some just to maintain the flavor, but I have a feeling this dish wouldn’t suffer in flavor with a little liquid missing.
Another tip I learned was to possibly start the meat and cauliflower rice cooking before preparing the vegetables. This could reduce prep time and get that delicious food to your belly sooner.
